Coconut Rolled Date Balls

A quick and tasty snack that does a good job of keeping you full between meals. These

date balls are a good alternative to pre-packaged snacks. And best of all, they freeze well,

so you can make a big batch ahead of time and thaw as needed!

INGREDIENTS:

 

  • 12 oz of whole dates, sliced in half with pits discarded
  • 2-3 tbsp nut butter (I prefer almond, but kids may prefer peanut)
  • 1/4 cup shredded unsweetened coconut

 

Optional Add-Ins: 3 tbsp chocolate chips, 2 tbsp protein powder, 2 tsp maple syrup, 3 tbsp chopped nuts, 3 tbsp dried berries, 2 tbsp cocoa powder

 

DIRECTIONS:

 

After preparing your dates, add half of the dates and half of the nut butter to a food processor and pulse until the dates become a thick paste and are combined with the nut butter. Scoop this out into a bowl and process the other half. If you're using mix-ins, add them into the bowl and work the "dough" until everything is combined. 

Sprinkle the coconut onto a plate. Using a small cookie scoop or a spoon, scoop up some of the date dough and roll into a ball. Roll the ball around in the coconut shreds until coated evenly. Repeat until all dough is used up.

Store these balls in the fridge for up to a week or freeze for up to a month and thaw as needed. ~Enjoy!
